Ndaro-ini AA is our first Kenyan coffee from the 2021/22 harvest and this one surely is a treat!
The farmers who provide cherries to the Ndaro-ini Factory have the benefit of perfect climatic conditions that mean the cherries have an extended time to reach maturity and be fully developed, this helps assist in producing hard, dense beans. The result of these conditions is an extremely sweet and juicy cup, and we experience vibrant berry and red currant notes in the cup.
Cherries are hand sorted for unripes and overripes by the farmers before being delivered to the wet mill. A disc pulping machine removes the skin and pulp. The coffees are graded by density, ensuring that only the highest quality, dense beans are selected for out lot.
The coffee is fermented for 16-24 hours under closed shade. After fermentation the coffees are washed with local spring water and again graded by density in washing channels and are then soaked under clean water from the Gatomboya stream for 16-18 hours.
This level of detail in the washing process gives a delightful level of flavour clarity and a clean fruit-forward finish. We have decided to omni-roast this coffee, meaning it can be enjoyed equally as filter coffee or espresso.
