THE NARRATIVE: WHY CANEPHORA

The Big Question: Why Canephora?

Because the future of coffee demands resilience. Often dismissed as "second tier," Canephora is the hardier sibling of Arabica—heat-tolerant, drought-resistant, and thriving where others fail.

When grown with intention, it reveals its own superpowers: unrivaled creaminess, cocoa depth, and a spice-driven structure. We aren’t just roasting a bean; we’re sharing a category that’s finally getting the respect it deserves.

From Australia's 3rd-Wave to Dak Lak's Red Soil

Founded by the Linh sisters, Soul Specialty Coffee is a bridge between worlds. After being shaped by the Australian coffee scene, they returned to their roots in Vietnam to prove that "robusta" doesn't have to mean bitter or basic.

By supporting better harvesting practices and paying farmers their asking price, they’ve turned Dak Lak into a laboratory for flavor.

A New Mental Model

Nick has been quietly—and obsessively—dialing this species for months, and these coffees specifically have his fingerprints all over them. From building new roasting profiles to testing how these beans behave on the bar, the goal was simple: to bring a serious, future-facing coffee to the Epoch community.

"This isn't just a different bean; it's a different language of flavor." — Nick
