This coffee is another amazing grown by Paola Trujillo at the farm Patio Bonito.
A staple in Colombian coffee production, Castillo is a variety known for its balance of resilience and flavor. Developed by Colombia’s National Coffee Research Centre, Cenicafé, and introduced in 2005, Castillo was bred to combat coffee leaf rust—a disease that once threatened the country’s coffee industry. By crossing Caturra with the Timor Hybrid, researchers created a compact, high-yielding plant with strong disease resistance, making it a preferred choice for many Colombian coffee farmers.
In the cup, Castillo offers a smooth profile with aromatic complexity and bright citric acidity. Typically roasted between light and medium to highlight its fruity characteristics, this variety can present flavors that range from delicate florals to tropical fruit notes. While some in the specialty coffee world have debated its quality compared to traditional Caturra, blind cupping studies have shown that Castillo holds its own, proving that great coffee is about more than just genetics—it’s about the care and craft of the producer.
