Jairo, a third-generation producer, took his hand-picked Castillo cherries and submerged them in an anaerobic environment for 72 hours alongside dehydrated banana skins and wine yeast. The result? A clean, washed coffee that carries the soul of a tropical harvest.
The Experience: Imagine a fresh-baked loaf of banana bread met a bright tropical sunset. It’s syrupy, fun, and completely redefines what Colombian coffee can be.
