From the renowned Finca El Paraíso in Cauca, Colombia, produced by the Bermúdez Family, this is a crafted washed coffee that behaves nothing like a traditional washed profile. Expect strawberry cheesecake, red apple, cherry, wrapped in a creamy body with a long, sweet finish. It’s vibrant, elegant, and almost unreal in its clarity.

The Story

The Bermúdez family is known for pushing the boundaries of coffee processing, blending microbiology, precision engineering, and food-science innovation. “Lychee Peach” coffees have earned global acclaim for their expressive fruit character — created not through additives, but through carefully cultivated microorganisms and controlled fermentation.

How It’s Processed (The El Paraíso Method)

After pulping, the coffee’s mucilage and fruit are taken to a pilot plant where Diego’s team produces a specialized yeast culture called Paraíso Yellow Fruit. This culture becomes a liquid full of natural aromatic precursors.

That liquid is then added back into the coffee during a 36-hour pressurized fermentation, allowing those fruit-forward compounds to bind deeply to the seed.

The coffee is then washed using thermal shock — hot water followed by cold — to “seal in” the aromatics, and dried gently in a closed dehumidifier to preserve clarity and stop over-fermentation.

The result is a cup that’s bright, silky, and unmistakably El Paraíso.
