We’ve always said that coffee is as much about chemistry as it is about craft. But lately, things have been getting… a little weird in the lab.

We’ve been experimenting with a single, exceptional lot: El Indio. It’s a bean we love for its inherent sweetness and structure. But while cupping, we realized something. Depending on how we apply energy in the drum, this coffee doesn't just change—it fractures.

The result is a glitch in the flavor matrix.

It’s the same bean, from the same soil, but it now exists in three different taste realities at the exact same time. By stretching the Maillard reaction or dropping the temperature at precise intervals, we’ve unlocked three distinct timelines for El Indio.

Reality 6 | The "Grounded" Timeline

The Vibe: Decadent, rich, and nutty. The comfort of the familiar, turned up to eleven.

Reality 9 | The "Balanced" Timeline

The Vibe: Our centerpiece. Perfectly syrupy, harmonious, and the cleanest version we could make.

Reality 3 | The "Chaos" Timeline

The Vibe: Bright, funky, and uninhibited. This is where the acidity runs wild.
