This Colombian coffee is first fermented in whole cherry with a wine yeast inoculation. It is then pulped for a CO2 injected red honey co-fermentation with dried fruits, strawberries and glucose. The coffee is then carefully dried under canopy before stabilizing in grain-pro bags.
An absolute fruit bomb, this carbonic macerated honey processed Caturra was co-fermented with dehydrated fruits and fruit glucose using a wine yeast (try saying that 10 times fast!). This exceptional coffee comes to us from producer Sebastian Ramirez of El Placer in Quindìo, Colombia and is sure to fill the room with sweet aromas of stewed fruit.
