This is the third time this coffee has blessed our roastery here in Moncton. Produced by smallholders in rural areas in Narino, Aponte honey is an indigenous-grown reserve lot. There are approximately 200 farmers who grow coffee around this region. They joined the Regional PLUS program at Cofinet in 2018 and gained imperative access to better processes for producing and processing specialty coffee.
The weather conditions are perfect for these honey processes, and it shows in the exceptional clarity and vibrancy on this offering.
These cherries were exposed to a dry anaerobic fermentation period of 40 hours followed by de-pulping and placed on raised beds below 35 degrees celsius until they reached 10% moisture.
It is 100% Caturra and tastes like:
golden raisin, yellow fruits, panela, with a beautiful clean citric acidity.
