Epoch 9- Jamison Savage Catuai Washed

This harvest of Catuai Washed is the first of the season!

After the cherries are harvested, they are transported to a wet mill where they'll be fully washed and de-pulped. The grains are then delivered to the dry house and placed on a 3 tiered, raised bed system where they are consistently agitated and monitored for a 18 to 20 day duration.

The coffee is then bagged and placed in a bodega to rest for the 'reposo' period. While in the bag, the humidity in the grains are given a chance to equalize and stabilize.
