The Ethiopian Bourbon Aruzi variety has a fascinating origin. Discovered in Inza, Cauca, this coffee’s unusual appearance and resilience captured the attention of farmers. Laboratory analysis revealed genetic ties to Ethiopian Bourbon, leading to its cultivation for its high yield and exceptional cup quality.
This micro-lot was harvested with meticulous care, meeting strict ripeness criteria and undergoing a unique 30-hour underwater fermentation. The coffee was then pulped, washed, and dried in temperature-controlled conditions to ensure peak flavor. The result is a cup that’s both complex and comforting.
