HIS ROAST: Luis
Jairo has been involved in coffee for over 50 years, managing the AGROCAFE in Colombia, purchasing and maintaining his own farms in Quindio, and helping his children Carlos and Felipe begin COFINET in 2016. This Tabi variety comes from Santa Monica, a farm I had the privilege of touring and tasting in September of 2024. This coffee is a washed process, exposing the cherries to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and dried in a temperature-controlled mechanical dryer until 20% moisture was achieved. Following this, the coffee was laid on covered patios for 3 days to reach a moisture % of 10.5 percent. The attention to detail in producing this coffee is evident when brewing!

HER ROAST: Helena
Luz Helena has been growing, managing, and producing coffee for 30+ years alongside her husband Jairo. Her farm La Leona, is a neighbouring plot to Santa Monica, and Finca Maracay, a beautiful land located in Armenia. This Pink Bourbon is silky, vibrant, and exceptionally clean. Similar to their reciprocated love, this coffee has exactly the same process at Jairo’s Tabi, making a beautiful synergy between these two selections.
