Epoch 9 - Paola's Pink Bourbon Filter

We are pleased to welcome Paola's Pink Bourbon back to our shelves. 

Grown by Paola Trujillo at Patio Bonito, this micro-lot is a bright, floral Pink Bourbon with a seriously elegant structure. The cherries undergo a 24-hour dry aerobic fermentation, then rest in GrainPro for 50 hours at a controlled temperature (kept below 22°C). After pulping and a gentle wash, the coffee finishes drying on raised beds until it reaches ideal moisture content.

Pink Bourbon is still under active research, with many believing it may be a mutation first found around 2100 MASL in San Adolfo, Huila—one of the reasons it’s become such a sought-after varietal in Colombian specialty coffee.
